Jan Inglis sends us a cheering recipe for a Christmas nibble.
Spiced Mixed Nuts
2 tablesp / 30 ml. Sunflower seed oil
1 lb. / 450g, Mixed shelled nuts (Almonds, Cashews, Peanuts, Pine Nuts, Pumpkin Seeds and Sunflower Seeds.)
1 Garlic clove, crushed.
½ teasp. / 2.5 ml. Chilli powder
½ teasp. / 2.5 ml. Paprika
2 tablesp. Soy sauce
Heat oil in frying pan.
Add nuts and stir over low heat 5-6 mins, until a pale golden colour.
Add garlic, chilli and paprika, stir for 2 mins.
Add soy sauce, stir to coat the nuts.
Fry until all the sauce is used up.
Remove pan from heat.
When cold store the spicy nuts in an airtight jar.
